Makes 18 servings3 sheets Black & Gold Puff Pastry, partially thawed
1 egg, lightly whisked
4 pitted black olives, sliced, cut into 3mm squares
1/4 cup Community Co Pepitas, toasted
1 cup firmly packed fresh basil leaves
1/3 cup Community Co Shaved or Shredded Parmesan
1/4 cup Community Co Extra Virgin Olive Oil
1 1/2 tbs lemon juice
1 small garlic clove, coarsely chopped
1/4 tsp salt
Directions
- Preheat oven to 190°C fan forced. Line 2 large baking trays with baking paper.
- For the pepita pesto place all ingredients in a blender. Blend, scraping down the sides halfway, until smooth and combined (pesto will be thick).
- Use a 9.5cm gingerbread man cutter to cut out 18 shapes from pastry sheets. Place on prepared trays. Use a ruler to cut 5mm strips of pastry from offcuts. Place on a lined plate and place in fridge to keep cool until use.
- Use a teaspoon to spread each mummy with pesto. Place offcut strips over each man, layering to create a mummy ribbon effect. Use a small sharp knife to trim offcuts and use the side of the knife to gently press against mummy to stick.
- Place 2 cut olive pieces on each mummy to represent eyes. Gently brush the tops of each mummy with the beaten egg. Bake, turning trays after 10 minutes, for 16 minutes or until golden, puffed and cooked through.
