

Deep Pan Pizza

Directions
- Heat a cast iron or heavy-based frying pan over medium heat. Add 1 tablespoon of olive oil and swirl to grease the base.
- Add the self-raising flour to the pan, then pour in the remaining olive oil and water. Season with salt and cracked pepper.
- Mix together in the pan until a soft dough forms. Press the dough evenly across the base and slightly up the sides (about 2cm thick).
- Spread the pizza sauce evenly over the dough.
- Sprinkle over the grated mozzarella cheese.
- Cover with a lid and cook over medium heat for 10 minutes, or until the base is cooked through and the cheese has melted.
- Carefully slide the pizza onto a board. Rest for 2 minutes before slicing into wedges. Top with fresh basil leaves if desired and serve.
