100g of Pitted Olives, drained
100g of Marinated Cheese Cubes, drained
115g of Semi-Dried Tomatoes, drained
200g of Greek Feta Cheese
435g of Assorted Cheese Pieces, including Camembert Wedges, Cheddar Cubes, Cream Cheese Slices and Gouda Triangles
Crackers or Crusty Bread (optional, to serve)
Directions
- Prepare the serving board. Choose a large, clean serving board or flat platter with enough space for two candy cane shapes. Plan where the straight sections and curved tops will sit before arranging the ingredients.
- Prepare the antipasto. Drain the olive and cheese selection, reserving its semi-dried tomatoes for the second candy cane. Halve 9 olives, removing any stones if necessary. Cut larger tomato pieces into smaller strips and gently blot excess oil to keep the board tidy.
- Cut the cheeses. Cut the Camembert into thin wedges, the Cheddar and Feta into bite-sized cubes, the Cream Cheese into approximately 1 cm thick slices, and the Gouda into 5 triangles. Prepare the cheeses while chilled for neater cuts.
- Fold the salami. Fold 4 salami slices in half and gather them together, securing with a toothpick. Repeat with the remaining slices to make 5 clusters. Keep the toothpicks visible so guests can easily identify and remove them.
- Build the first candy cane. Starting at the bottom of the board, arrange small groups of Olives, Salami, Gouda and Feta in a repeating pattern. Keep the groups close together and maintain a consistent width. Gradually curve the upper section to form the candy cane hook.
- Build the second candy cane. Beside the first cane, repeat the process using Semi-Dried Tomatoes, Camembert, Cream Cheese and Cheddar. Alternate the contrasting colours and textures, shaping the top into a matching curve. Adjust individual pieces to fill gaps and define the outline.
- Finish and serve. Arrange any spare antipasto cheese cubes or other remaining pieces alongside the canes or serve separately. Add optional festive ribbon around the board handle or beside the platter. Serve with crackers or crusty bread in a separate basket. Keep chilled until close to serving.
