Directions

  1. Prepare the ingredients. Wash the grapes and rosemary, then dry thoroughly. Drain the semi-dried tomatoes and antipasto, lightly blotting away excess oil or moisture. This helps keep the board tidy and prevents the crackers from becoming soggy.
  2. Prepare the cheese. Cut a thick slice from the cheddar block and use a small star-shaped cutter to make the tree topper. Alternatively, carefully cut a star with a small knife. Cut the remaining cheddar into approximately 1 cm cubes. Slice the brie or camembert while chilled for neater wedges.
  3. Organise the components. Keep a small portion of grapes aside for a second row near the top, and reserve three pieces of Twiggy Sticks for the tip. Group the prepared ingredients in separate bowls so they are easy to arrange.
  4. Plan the tree shape. Choose a large, flat serving board or platter. Allow enough space for a wide base, a narrow top and the cheese star. Position the square lavosh cracker at the bottom as the trunk, then arrange an overlapping row of salami above it.
  5. Build the layers. Working upwards, arrange rows of grapes, cheddar cubes, Twiggy Sticks, brie or camembert, and antipasto. Make each row shorter than the one below and keep it centred to create an even triangle. Keep the ingredients close together so the tree looks full.
  6. Shape the top. Continue with the reserved grapes, followed by overlapping wafer crackers, a small mound of semi-dried tomatoes and the three reserved Twiggy Stick pieces. Leave a little space for the star. If preparing ahead, add the crackers close to serving so they stay crisp.
  7. Add the finishing touches. Tuck small rosemary sprigs into gaps to suggest branches, then position the cheese star at the top. Adjust any uneven rows and wipe away excess oil or crumbs around the edges.
  8. Serve. Present with small serving utensils and optional extra crackers in a separate bowl. The crackers within the tree form part of the decoration, so additional crackers are useful for sharing.
