Father's Day Hot Honey Bacon & Egg Breakfast Muffin

Crispy bacon, melted cheese, fried egg and hot honey come together in a toasted English muffin for a Father's Day breakfast that's packed with sweet, savoury and spicy flavour.

Makes 4 servings
4 English Muffins, Split and Toasted (or Brioche Buns, Burger Buns or Turkish Bread Rolls)
8 Slices Short Cut Bacon
Primo Short Cut Bacon
4 Large Eggs
Canobolas Eggs Jumbo
4 Slices Cheddar Cheese (or Swiss, Tasty, Colby or American Cheese)
Kraft Cheddar Cheese
2 Tablespoons Hot Chilli Honey, Plus Extra for Drizzling (or Honey Mixed with Chilli Flakes, Honey Mixed with Hot Sauce, or Maple Syrup with a Pinch of Chilli Flakes)
2 Tablespoons Butter or Olive Oil
Salt, To Taste
Freshly Ground Black Pepper, To Taste
1 Cup Baby Spinach Leaves (Optional Extra)
1 Large Tomato, Sliced (Optional Extra)
Gourmet Tomatoes
1 Avocado, Sliced (Optional Extra)
Hass Avocado
Hash Browns, To Serve (Optional Extra)

Directions

  1. Toast the English Muffin halves until lightly golden and crisp. Set aside and keep warm.
  2. Heat a large frying pan over medium heat. Add the bacon and cook for 3–4 minutes on each side, or until golden, crispy and caramelised. Transfer to a plate lined with paper towel and keep warm.
  3. Reduce the heat to medium-low and add the Butter or Olive Oil to the pan.
  4. Crack the eggs into the pan and cook to your preferred doneness. Season lightly with Salt and Freshly Ground Black Pepper.
  5. When the eggs are almost cooked, place a slice of cheese over each egg. Cover the pan with a lid for 30–60 seconds, or until the cheese has melted.
  6. To assemble, place the base halves of the toasted English Muffins onto serving plates. If using the optional Baby Spinach Leaves, Tomato and/or Avocado, layer them onto the muffin bases.
  7. Top each muffin with 2 slices of crispy bacon, followed by a cheesy fried egg.
  8. Drizzle each muffin with the Hot Chilli Honey, allowing it to coat the bacon and egg for the perfect balance of sweet heat.
  9. Finish with the top halves of the English Muffins and drizzle with a little extra Hot Chilli Honey, if desired.
  10. Serve immediately while warm with Hash Browns, if using, for a delicious Father's Day breakfast or brunch.
