Directions

  1. Prepare the plum sauce: Heat one tablespoon of oil in a saucepan over medium heat. Add the onion, garlic, chilli and ginger and sauté gently, stirring until softened and fragrant.

  2. Cook the sauce: Stir in the tomato paste, plums and white wine. Continue cooking for about 5 minutes, allowing the plums to soften and break down.

  3. Blend the sauce: Remove from the heat and allow the mixture to cool slightly. Blend or puree until smooth and thick. Set aside.

  4. Prepare the chicken: If using chicken breast, cut the chicken into bite-sized cubes and thread onto skewers. If using pre-prepared chicken skewers, they can be cooked as is.

  5. Cook the chicken: Heat the remaining oil on a hot grill plate or barbecue. Cook the chicken skewers for around 4 minutes on each side, or until cooked through and lightly charred.

  6. Serve: Serve the chicken skewers with Low GI rice and a fresh grated slaw. Place the spicy plum sauce in a small dish for dipping and enjoy.
