To Prepare: Cover vermicelli in cold water and soak. Leave at room temperature for 15 minutes or until noodles are transparent. Drain and cut into shorter manageable lengths. The noodles are now ready to be added to your favourite soup or stir-fry. Fried Noodles: Break bundles and deep fry in very hot oil. When vermicelli rises to the surface remove with a slotted spoon and drain on paper towel. Serve under stir-fry or vegetable and meat dishes.
