Makes 12 servings
2kg Pork Leg, Bone Out. Remove the outer layer of fat.
Free Country Pork Medallions
375g Packet of Mixed Dried Fruit
1 Cup of of BBQ sauce
1 tablespoon of Salt and Pepper

Directions

  1. Place the pork, trimmed of all excess fat, in a large slow cooker (approx. 6.5 litres).
  2. Season with thyme, sea salt and cracked pepper.
  3. Add in the dried fruit and the BBQ sauce*
  4. Cover and cook on low for 8 hours or high for 6 hours
  5. Using two forks, shred the pork and stir it into the fruit sauce
  6. Sit for 10 minutes before serving.
