Makes 8 servings2kg Pork Rashers or Pork Leg
1 Tablespoon of Olive Oil
½ Cup of Finely Chopped Walnuts
1 Tablespoon of Snipped Fresh Rosemary
Directions
- Preheat your oven to 180C.
- Remove the rind of your pork and gently place it on a rack in a shallow baking pan.
- Combine walnuts and rosemary; press them over top and sides of your roast.
- Finish with a generous sprinkle of sea salt and cracked pepper.
- Roast for 1½ hours or until juices run clear.
