Makes 4 servingsFor The Marinade: 2 Tablespoons Honey (Or Maple Syrup)
For The Marinade: 1 Tablespoon Dijon Mustard (Or Wholegrain Mustard)
For The Marinade: 2 Garlic Cloves, Crushed (Or 2 Teaspoons Minced Garlic)
For The Sausages: 12 Thin Beef or Pork Sausages (Or Pork Sausages Or Chicken Sausages)
For Cooking: 1 Tablespoon Olive Oil, For The BBQ Plate If Required
To Serve: 12 Soft Bread Rolls (Or Hot Dog Rolls)
To Serve: Butter, For Spreading
To Serve: Tomato or BBQ Sauce (Optional)
To Serve: Caramelised Onions (Optional)
Directions
- In a large shallow dish, combine the Honey, Dijon Mustard and Garlic and stir until smooth and well combined. If using Maple Syrup, Wholegrain Mustard or Minced Garlic instead, add them at this stage in the same quantities.
- Transfer approximately one-quarter of the marinade to a small clean bowl and set aside for glazing the sausages during cooking. Do not allow the reserved marinade to come into contact with the raw sausages.
- Add the Beef Sausages to the remaining marinade and turn until evenly coated. If using Pork Sausages or Chicken Sausages instead, prepare them in the same way.
- Cover the dish and refrigerate for 1 hour to allow the flavours to develop.
- Preheat the BBQ hotplate or grill over high heat. Lightly brush the hotplate with Olive Oil if required, then reduce the heat to medium before adding the sausages.
- Remove the sausages from the marinade, allowing any excess to drip back into the dish. Discard the marinade that has been in contact with the raw sausages.
- Cook the sausages over medium heat for 10–12 minutes, turning regularly, or until evenly browned and cooked through. If using thicker sausages, allow additional cooking time as required.
- During the final 2–3 minutes of cooking, brush the sausages with the reserved clean Honey Mustard Marinade, turning regularly until sticky, glossy and lightly caramelised.
- Meanwhile, split the Bread Rolls and spread with Butter. Lightly toast the rolls on the BBQ, cut-side down, for 1–2 minutes if desired.
- Place the cooked Honey Mustard Sausages into the prepared rolls and serve immediately with Tomato Sauce and Caramelised Onions, if desired.
